{"id":69,"date":"2007-12-21T00:01:19","date_gmt":"2007-12-21T04:01:19","guid":{"rendered":"http:\/\/www.phildev.net\/phil\/newblog\/?p=69"},"modified":"2007-12-21T00:01:19","modified_gmt":"2007-12-21T04:01:19","slug":"","status":"publish","type":"post","link":"https:\/\/www.phildev.net\/phil\/blog\/?p=69","title":{"rendered":"White Chocolate"},"content":{"rendered":"<p>I&#8217;ve had quite a few conversations about that disappointment you have when you find out that white chocolate is actually made from vanilla.<\/p>\n<p>And tonight, as I sat around I wondered why something made out of vanilla would be called chocolate. So I looked it up on the awesomeness that is <a href=\"http:\/\/www.wikipedia.com\/\" target=\"_blank\">Wikipedia<\/a>.<\/p>\n<p><a href=\"http:\/\/en.wikipedia.org\/wiki\/White_chocolate\" target=\"_blank\">White chocolate<\/a> isn&#8217;t made out of vanilla at all. It&#8217;s made of cocoa, just like normal chocolate. The only difference is that it&#8217;s made of <a href=\"http:\/\/en.wikipedia.org\/wiki\/Cocoa_butter\" target=\"_blank\">cocoa butter<\/a> instead of cocoa solids. This means it cannot be marketed as chocolate in most countries, but it&#8217;s not made of vanilla. In fact, white chocolate is itself regulated in the US (since 2004) as 20% cocoa butter (by weight), at least 14% total milk solids, at least 3.5% milk fat, and less than 55% sugar or other sweeteners.
